Difficulty: Easy

  1. Preheat the oven to 350 degrees
  2. On a sheet tray, evenly spread the salt to form a layer
  3. Place the potatoes on top of the salt and roast in the oven for 45 minutes
  4. Remove from oven, peel while hot and crush the potatoes with a fork
  5. While crushing the potatoes, slowly add in the olive oil until incorporated
  6. Add the chopped parsley and season with salt and pepper
